CHICKEN TEA SANDWICHES

Chicken tea sandwiches are my favorite because they can be so very different in both flavor and presentation.  Here are a few recipes including the one pictured here that would be great for Curried Chicken Day on January 12th.  They will get you started, but any favorite chicken salad recipe can be adapted as a wonderful filling!

CHICKEN TEA SANDWICHES:  Combine 2c cooked chicken, 1/2c mayonnaise, 1/4c finely chopped celery, season with salt and pepper and refrigerate overnight.
Variations:
          Add 1/2c dried cranberries and 1/2c chopped toasted pecans
          Add 1/3c raisins, 3Tbs toasted sliced almonds and 1Tbs curry powder
         
Add 1 avocado, 2 sliced green onions & lime juice

CHICKEN PUFFS
2c chopped cooked chicken
1/4c mayonnaise
1/4c chopped celery
1Tbs fresh chopped tarragon
            Combine all ingredients, salt and pepper and refrigerate overnight.

2Tbs butter
1 egg
1/4c flour
1/4c shredded Swiss cheese
            Melt butter in 1/4c boiling water.  Add flour and dash of salt stirring vigorously.  Cook and stir until mixture forms a ball.  Remove from heat, cool slightly, then add egg and beat until smooth.  Stir in cheese.  Drop by teaspoonful onto greased sheet.  Bake at 400 about 20 mins.  Cool and split.  Fill with chicken mixture and serve.

CHICKEN SALAD CUPS:  Combine 2c cooked chicken, 1/4c mayonnaise, 1/4c finely chopped celery and 1/2c chopped spiced grapes, season with salt and pepper and refrigerate overnight.  To serve place in phylo cups and garnish with spiced grapes.
Spiced Grapes:  Simmer 2c red wine vinegar and 2Tbs pumpkin pie spice for 5 mins then add 3c red seedless grapes.  Turn off heat, cool then refrigerate.  

CHICKEN CHUTNEY SANDWICHES: Combine 2-8oz packages cream cheese, 1/2c chopped green onions & sweet red pepper in a food processor.  Add 1Tbs curry powder, 2tsp Worcestershire sauce, 1-9oz jar Mango chutney, 1/2c toasted sliced almonds and 1 c cooked chicken.  Spread on raisin bread triangles and garnish with toasted sliced almonds.
