January 16th is International Hot and Spicy Food Day and chili immediately comes to mind! Invite your family or friends over for a Chili Cook-off. You’ll be surprised at all the different ingredients they’ll come up with from the traditional beef to white chili with chicken. Each guest gets to show off their cooking skills and everyone gets to taste and choose the winner!
Here’s a recipe for a white chili with a little cinnamon twist:
Favorite White Chili
4 cooked chicken breasts, cubed
2 cans great northern white beans, rinsed
1 cup frozen white corn
1 onion, diced
1 yellow bell pepper, diced
1 fresh garlic clove, minced
3 c chicken broth
1Tbs ground white pepper
2 tsp cumin powder
1 tsp coriander powder
1 tsp cinnamon
½ cup sour cream
½ cup shredded Colby-Jack cheese
Tortilla chips
Sauté onion, bell pepper and garlic in olive oil. Add chicken broth and seasonings and bring to a boil. Add chicken, beans and corn, reduce heat and simmer 30 minutes. Serve over crushed tortilla chips and garnish with sour cream and grated cheese.

It seems appropriate that our anniversary falls on the same day honoring spicy foods...my husband's favorite kind of food!
