HARVEST SPICE BLEND

November 14th is WORLD KINDNESS DAY. This is a perfect opportunity to bless others with a little kindness. Here are a few ways you can organize your family to celebrate this important day – donate canned goods to a community Food Pantry, volunteer at a local charity for a day or bake a batch of autumn treats to share as a blessing with a shut-in neighbor or residents of a local nursing home. Even if it is a very tiny act of goodness and you think no one notices, God notices. Always remember that one little act of kindness can tilt the balance of an entire situation. One little act of kindness can ripple out in countless ways that you many never know about.

HARVEST SPICE BLEND
3Tbs ground cinnamon
1Tbs ground cloves
1Tbs ground nutmeg
1Tbs ground allspice
2tsp orange peel powder

This blend is perfect to use throughout the harvest season in all your apple and pumpkin recipes and also tastes terrific sprinkled on top of eggnog.

APPLE MUFFINS
Combine 1 1/2c flour, 1/2c sugar, 2tsp baking powder, 1/2tsp salt and 1Tbs HARVEST SPICE MIX. Cut in 1/4 cup butter until mixture resembles course crumbs. Add 1/2c raisins (optional), then add 1 beaten egg, 1/2c chunky applesauce and 1/2c milk. Mix until moistened. Fill greased or paper line muffin pans 2/3 full. Bake at 350 degrees for 15 minutes, or until done. Makes 1 dozen muffins or 3 dozen mini muffins.

PUMPKIN CRUNCH CUPCAKES
Combine 1 package yellow cake mix, 1-15oz can pumpkin and 2tsp HARVEST SPICE MIX in food processor just until mixed. Combine another package of yellow cake mix with 1c chopped pecans and 1c melted butter. Fill lined muffin tins half full with batter and top with crunch mixture. Bake at 350 degrees for 15 minutes.
