TEA TIME PEACHES

Peaches, Prunus persica, are round juicy fruits with a fuzzy skin and a large inside stone that originated in China even though the fruit was named based on Persia as its country of origin.

Of course using peaches fresh is best, but be careful they don’t get bruised or they will spoil fast. That’s why a lot of peaches are eaten cooked in pies, jams, chutneys, etc. They can also be pureed and frozen for use at a later date. When selecting peaches look for a gold under color that indicates ripeness as those with a green under color will never ripen, plus a well-defined crease and good fragrance.

National Peach Cobbler Day is April 13th and you will find a great recipe here, plus you can use peaches for your next tea party with these additional recipes:

PEACH PUNCH
1c sugar
2c water
2c sliced peaches
1/2c orange juice
1/4c lemon juice
         
Make a simple syrup by boiling the sugar and water together for a minute, then cool. Puree peaches and combine with the orange and lemon juice, then add to the syrup and chill thoroughly. Strain and add ice water or ginger ale, diluting to taste, just before serving

PEACH & WATERMELON SALSA
1c chopped peaches
1c chopped watermelon
1 chopped sweet red pepper
3Tbs orange juice
1Tbs chopped fresh spearmint
1Tbs chopped red onion
         
Combine ingredients until well blended and refrigerate at least 30 minutes. Serve as garnish on open-faced tea sandwiches.

PEACHES & CREAM TEA SANDWICHES
6 slices whole grain bread
4oz cream cheese, softened
1-2 peaches thinly sliced
3Tbs seedless raspberry jam
         
Spread half of the bread with cream cheese and top with peach slices. Spread the remaining bread with the jam and combine to make sandwiches. Remove crust and cut into triangles.

SPICED PEACHES & CRÈME TEA CAKES: Combine a yellow cake mix with 1Tbs mixed spices and add a can of peach pie filling. Place in greased mini muffin tins and bake at 350 degrees for 15 mins. Cool, turn upside down and drizzle with a mixture of thinned cream cheese icing and the mixed spices.
