CHAI SPICE BLEND

Most masala chai contains a combination of several of the following: green cardamom pods, cinnamon sticks, whole cloves, allspice, broken star anise and always freshly ground peppercorns, however this blend of ground spices attempts to duplicate the flavors rather than the exact spices:

Chai Spice Blend

2Tbs ground cinnamon

2Tbs ground cardamom

1Tbs ground cloves

1Tbs ground ginger

Freshly ground pepper

 

It can be used to add a new twist to a variety of favorites such as these: 

Spicy Chai Hot Cocoa Mix: Blend 1/2c sugar, 1Tbs flour, 1/4c cocoa, 1/4tsp salt, 1Tbs Chai Spice Blend and powdered milk to make 6 cups.  To use: combine ¾ cup mix with 8 cups water and simmer 4 minutes.

Chai Spice Spread: Blend together 8oz cream cheese & 2/3c powdered sugar, add 1/2tsp vanilla & 1Tbs Chai Spice Blend until smooth. Chill 2 hours. Serve with scones.

Chai Cookies: Cream together 1c butter, 1 ½ c sugar & 1Tbs Chai Spice Blend then add 1/2tsp baking powder & 1/2tsp salt until combined.  Add 2 eggs, 1/4c milk and 1 1/2tsp vanilla, then gradually add 3c flour and mix well. Cover & chill for 2 hours then roll out dough, cut out shapes, place on ungreased cookie sheet & bake at 425 for 5 mins.

Chai Crunch: Melt 1/2c butter and 1/2c honey, add 1Tbs nonfat dried milk, 2Tbs Chai Spice Blend and 1 tsp vanilla and pour over a combination of 3c each Corn Chex, Wheat Chex, Honey Nut Cherrios and 1 1/2c sliced almonds.  Bake at 300 degrees for 45 mins, stirring every 15 mins.

Chai Latte Brownies: Combine 1/2c milk, 1Tbs Chai Spice Blend, 1/4c semisweet chocolate chips and 1/4c butter and heat until melted.  Cool slightly then add 2 eggs and whisk together.  Combine 1 1/2c flour, 1 c sugar, 1/2c cocoa, 1/3c brown sugar, 1 tsp baking powder and ½ tsp salt and then add to chocolate mixture , stirring just until combined.  Spread into greased 9” square pan and bake at 350 degrees for 30 mins.  Cool 10 mins, then cut and serve warm and gooey.
