PEANUT BUTTER TEA COOKIES

Time to revive the simple pleasure of having tea – take a break, enjoy companionship and a cookie or two.   June 12th is Peanut Butter Cookie Day and here are some favorite no bake peanut butter cookies to share with a great cup of tea!

 

Peanuts have been around for a long time, but peanut butter is another story.  It is believed to be the invention of a physician, Dr. Ambrose Straub, who crushed peanuts into a high-protein food for patients who couldn’t chew and was introduced at the Chicago World’s Fair in 1880!

CHOCO-PEANUT BUTTER PRETZEL BALLS
1 1/2c pretzels, crushed
1/2c peanut butter
1Tbs butter
2Tbs brown sugar
3Tbs powdered sugar
1c semi-sweet chocolate chips
         
Combine all ingredients except chocolate chips.  Scoop a teaspoon of the mixture, roll into a ball and place on waxed paper.  Refrigerate 30 minutes.  Melt chocolate then coat each ball and place back on waxed paper.  Refrigerate and chill another 30 minutes before serving.

OATMEAL TEA TREATS
1c oatmeal
2/3c toasted coconut flakes
1/2c peanut butter
1/2c chocolate chips
1/4c dried cranberries
1/4c chopped peanuts
1/3c honey
1tsp vanilla
         
Combine all ingredients and chill in the refrigerator for half an hour. Once chilled, roll into balls. Store in an airtight container and keep refrigerated for up to 1 week.

DECADENT TEA SQUARES
1c peanut butter
1/2c corn syrup
1/4c sugar
2c granola
1/2c shredded coconut
1/2c chopped pecans
1tsp vanilla
         
Combine ingredients.  Melt 1 pound Belgian chocolate.  Layer peanut butter mixture and then chocolate in a greased 8”x12” pan then refrigerate.  Indulge!
