FRESH FRUIT SWEETS

It’s National Fresh Fruit and Vegetable Month, so take advantage of your local farmer’s
markets to purchase ingredients for your tea parties this month. Here are three of my favorite recipes for tea time sweets made with fresh fruit:

COCONUT BANANA BALLS: Cut bananas into bite-sized pieces, then dip balls in plain yogurt and roll in shredded coconut. Refrigerate for several hours before serving.

MINTED MELON SKEWERS: Combine 1 c water and 1/3 c sugar and bring to a boil. Cool and combine with 1/2 c fresh spearmint in food processor until finely chopped. Toss mixture with 1 1/2 c each of watermelon, honeydew & cantaloupe. Chill at least 30 minutes. Place melon on a skewer to serve.

FRUIT DIAMONDS: Roll out 1 pkg (20oz) refrigerated sugar cookie dough and cut into diamonds. Bake at 350 degrees for 15 mins or until golden brown. Cool. Top with whipped cream mixed with equal amounts of whipped cream cheese and powdered sugar and garnish with assorted fruit such as bananas, kiwi, sliced strawberries, halved grapes or cherries. Refrigerate until serving time.
