DELIGHTFUL DILLY BLEND

 

clip_image002February is National Snack Food Month and one of my favorite herb blends for snacks is Delightful Dilly. 

It is made by combining 2Tbs dill, 2Tbs parsley, 1Tbs onion and 1Tbs chives. This blend is very versatile and may be used on fresh fish, added to egg salad, or in numerous snack recipes including the following:

 

Almond Dilly Cheese Ball:  Combine 1/2c toasted sliced almonds, 1-8oz cream cheese, 1/2c mayonnaise, 4Tbs crumbled bacon, 1Tbs chopped green onion and 1Tbs Delightful Dilly herb blend. Cover and chill overnight then form into a ball and roll in additional chopped toasted almonds if desired.

Dilly Snack Mix: Combine 2qta popped popcorn, 2-1 1/2oz can potato sticks, 1c salted nuts.   Combine 1/2c butter, 1tsp Worcestershire sauce and 1Tbs Delightful Dilly herb blend and pour over snack mix. Stir until evenly coated.  Bake at 350 degrees for 6-8 minutes, stirring once.

Confetti Nibbles: Boil 20 small round red potatoes until tender, about 15 mins. Then drain and cool.  Cut potatoes in half and scoop out center leaving a firm shell.  Chop potato and combine with 1/2c mayonnaise, 1Tbs Delightful Dilly herb blend, 6 chopped hard boiled eggs, 1/2c chopped green onions and 1/2c chopped red pepper.  Mound mixture into the potato shells and refrigerate to blend flavors.  Garnish with fresh dill sprigs.

Dilly Oyster Crackers: Combine 2 packages oyster crackers, 1c vegetable oil, 1tsp garlic powder and 1Tbs Delightful Dilly herb blend.  Allow to set until all oil is absorbed, mixing often.  Store in airtight container.
