SEED PLANTING PARTY

imageInvite some friends over to plant seeds for a veggie or herb garden this year. Send out invitations, gather together the needed materials and get ready for a head start on gardening.  Planting seeds together will not only be more fun, it’s more economical also since there are always more seeds than needed in a single packet. You’ll also need a good seed starting soil mix and something to pot the seeds in.

Try all natural seed starting pots by using eggshells – just crack off the tips, reserving the eggs for cooking, prick a few draining holes in the bottom and fill with the soil mix. Plant one or two seeds in each and simply keep them moist in a warm location. In no time you’ll have seedlings that can be planted out when the weather warms up by simply crushing the shells a bit so the roots have room to grow.

Some of the best herbs to start from seed include: Basil, Borage, Calendula, Cayenne pepper, Chervil, Cilantro, Dill, Marjoram, Nasturtium, Parsley and Savory

Celebrate your creativity, anticipate the harvest and use the contents of some of those eggshells by serving these mini quiches with a fruit salad and of course, a fresh brewed pot of tea!

MINI HERB QUICHES
1pkg Grands butterflake rolls
1/2c shredded Cheddar cheese
1c chopped zucchini
1 roasted tomato
2Tbs caramelized red onion
2 eggs
1c light cream
¼ tsp each parsley, chives, tarragon & chervil

          Grease muffin tins. Separate each roll in half and press into tins for shell. Divide vegetables and onion between shells. Combine eggs, cream and herbs and fill shells then sprinkle with cheese. Bake at 325 for 20 mins. or until golden. May be frozen and reheated at 350 degrees for 15 mins.
