June 17th is EAT YOUR VEGETABLES DAY and there’s no better way, in my opinion, than to eat them fresh in a salad with your own homemade dressing. Choose one of these herbal blends to create a one of a kind dressing:
CAESAR SALAD DRESSING MIX
3Tbs grated parmesan cheese
1Tbs dried lemon peel
1Tbs crushed dried oregano
1tsp ground black pepper
1tsp garlic granules
Mix all ingredients in a small bowl. Place in a re-sealable plastic bag or a small jar. Store for about 3 months.
To make dressing: Combine 2Tbs of the mix, 1/2 cup vegetable or olive oil, and 1/4 cup wine vinegar. Whisk or shake until well blended. Chill until serving time.
SALAD DRESSING & SEASONING MIX
1Tbs dill weed
1Tbs tarragon
1Tbs sesame seeds
1Tbs lemon pepper
2tsp chives
1tsp cayenne pepper (optional)
Mix all ingredients well, pour into container and seal tightly. Store in a cool, dark place. You can season pasta salads, chicken or turkey salads, tuna, or any salad mix with this OR mix it with the following:
3/4 c mayonnaise (light or regular)
3/4 tsp Dijon-style mustard
1Tbs SALAD DRESSING & SEASONING MIX
Thoroughly mix ingredients, place in a sealed jar and refrigerate until ready to use. This can be used for potato salads, pasta or green salads.
SALAD SEASONING
2Tbs sesame seeds
1Tbs poppy seeds
1tsp celery seed
1tsp onion
1tsp sea salt
1/2tsp garlic granules
1/4tsp dill seed
1/4tsp basil
1/4tsp black pepper
Combine and store in an airtight container. Add to 1/2c Parmesan cheese and sprinkle on salad greens or add to vinegar and olive oil for a dressing
SPRING GREENS DRESSING MIX
2Tbs chervil
1Tbs lovage
2tsp onion
2tsp tarragon
2tsp basil
1tsp dill weed
1tsp thyme
1/2tsp paprika
1/4tsp black pepper
1/4tsp garlic
Combine herbs and then add 2Tbs herb mix to 1c good quality mayonnaise and 2/3c plain yogurt. Chill overnight before using.
